For Meatless Monday, a new twist on a salad: Salad in a Jar
I have been seeing salads in jars all over Pinterest and finally gave it a try.

It worked out as a great way to make salad the day before and take it to work without anything getting soggy. Putting the grape tomatoes intact in the dressing on the bottom kept everything fresh.
I layered mine as follows, top to bottom.
- cashews
- mixed greens
- sliced mushrooms
- corn
- chickpeas
- shredded carrots
- grape tomatoes
- balsamic vinaigrette
Give it a shake just before serving.
It would be great for a picnic too.
That’s my son mowing the lawn in the background. He likes to be as far away from salad as possible. Not me.

That looks super delish. I’ve seen them on Pinterest as well. Do you think salads can be prepared in that matter a few days in advance and “stay”? I was thinking that might be a nifty work lunch idea, since I always forget to bring my lunch or don’t have enough time and end up eating….well, CRAP (i.e. fast food or convenience food).

Mine have kept fresh for several days, as long as I keep the lettuce/greens separated from the dressing.
