Once a peanut butter and jelly sandwich became a frequent Meatless Monday meal, I knew it was time to look around for some new inspiration. These vegetarian meals are easy and delicious.
1. Cacio e Pepe (from A Cozy Kitchen)

This is my new favorite quick pasta sauce. It’s very rich, but I make it with whole wheat pasta and serve it alongside a lot of veggies. A classic Roman dish, it’s usually made with only cheese, pepper, and butter. So simple, so flavorful. I sometimes sneak in hot pepper flakes. (Shh, don’t tell.)
2. Mujadara (from Rosewater & Orange Blossoms)

This super-healthy dish is easy to prepare and pairs well with sauteed greens. I’ll make a double batch and have it as a side dish throughout the week.
3. Macaroni and (Long Island) Cheese Squash (from Then Heather Said)

When I got a huge Long Island Cheese Squash in my CSA, I had no idea what to do with it. This recipe is a great way to sneak a lot of nutrition into good old mac and cheese. Even my picky eater loved it, and he would not eat squash if cooked separately.
4. Stacked Enchiladas (from Two Peas & Their Pod)

Mexican casseroles are always a hit with my family. The kids and my husband never miss the meat, which I can’t say for all of my meatless meals. I served these enchiladas with brown rice, refried beans, avocado, and salsa.
5. Veggified Falafel (from Peas & Crayons)
I like how this recipe uses leftover vegetables in the chickpea patties. It’s a dish that’s great to serve with a lot of fixings, such as tomatoes, cucumbers, onions, sprouts, bell pepper, shredded carrots, and tzatziki or tahini sauce. We all put together own own pita sandwiches at the table.
